Chili Chicken with Lemon & Lime

Chili Chicken with Lemon & Lime

Ingredients

2 tbsp chili powder

1 tsp salt

1/2 tsp black pepper

3 lb boneless skinless chicken breasts

1 each medium zucchini

1 medium red onion

1/4 cup chicken broth, low sodium

1/4 cup fresh lime juice

1/4 cup fresh lemon juice

2 each medium garlic cloves
Directions

  1. In a small bowl combine the chili powder, salt and pepper.
  2. Sprinkle spice mixture over chicken, rub in with your fingers.
  3. Place chicken in a 4 to 5 quart slow cooker. Add zucchini and onion.
  4. In a small bowl combine chicken broth, lime juice, lemon juice, and garlic. Pour over mixture in cooker.
  5. Cover and cook on low heat setting for 5 to 6 hours or on high heat setting for 2 1/2 to 3 hours.
  6. Remove chicken and vegetables to a serving platter. Discard cooking liquid. Enjoy!

Chicken and White Bean Chili

Chicken and White Bean Chili

1 tablespoon extra-virgin olive oil

1 medium onion, roughly chopped

1 garlic clove, minced

1 pound boneless skinless chicken breast

1 tablespoon chili powder

1 teaspoon ground cumin

1 (15-ounce) can cannellini beans, rinsed and drained

1 (14 1/2–ounce) can fire roasted diced tomatoes

1 cup low-sodium chicken broth

Salt and freshly ground black pepper
Directions

Heat oil in a large saucepan over medium-high heat. Add onion and cook, stirring occasionally, until softened, about 5 minutes. Add garlic and cook 1 minute more.

Add chicken, chili powder, and cumin; cook, stirring often, until turkey is no longer pink inside, about 5 minutes.

Add beans, tomatoes with juice, and broth; bring to a boil. Reduce heat to medium-low, cover, and simmer until flavors blend, about 15 minutes. Season with salt and pepper to taste and serve.
