Sausage Stuffed Mushrooms

Sausage Stuffed Mushrooms

So good, you may want to make a double batch!



16 medium white button mushrooms (1 pound)

¼ pound ground hot turkey sausage

2 ounces light cream cheese

1 green onion, thinly sliced

1/8 tsp salt

1/8 tsp pepper

Parsley for garnish



  1. Preheat the oven to 375 degrees and spray a sheet pan with cooking spray.
  2. Wipe mushrooms clean with damp cloth. Carefully twist out the stem and place caps on baking sheet. Chop stems and set aside.
  3. Saute turkey sausage, and chopped mushroom stems to skillet over medium high heat and brown well. Remove from heat and drain.
  4. While still hot, combine sausage & mushroom mixture with cream cheese, green onion, salt & pepper. Stir to mix and stuff each mushroom cap with a heaping spoonful of the stuffing.
  5. Bake stuffed mushrooms for 15 minutes or until mushrooms are tender. Sprinkle with parsley. Serve hot.

Boneless Buffalo Chicken Bites

Boneless Buffalo Chicken Bites

Boneless Buffalo Chicken Bites

Baked to perfection! 


1 large bag regular pork rinds

½ tsp Italian seasoning

¼ tsp pepper

1/8 tsp garlic powder

1 ½ pounds boneless, skinless chicken breasts, cut in 1 inch cubes

2 large eggs, beaten

¼ cup Texas Pete

¼ cup butter, melted



  1. Preheat oven to 400 degrees and spray baking sheet with cooking spray.
  2. In large storage bag, crush pork rinds with rolling pin or the flat edge of a meat mallet. Add Italian seasoning, pepper and garlic powder.
  3. Dip chicken cubes in beaten eggs and then place into the bag of seasoned pork rind crumbs. Shake to coat.
  4. Remove cubes and gently place on baking sheet. Bake at 400 degrees for 15-16 minutes or until juices run clear.

Note: Serve your Buffalo Chicken Bites with bleu cheese dressing and celery sticks.

Ham & Cheese Fritters

A southern favorite!



4-6 cups vegetable oil (for frying)

1 cup diced cooked ham

½ cup shredded sharp Cheddar cheese

½ cup whole wheat or almond flour

½ cup soy flour

3 large eggs

1 Tbls fresh chives, chopped

1 Tbls baking powder

½ tsp salt



  1. Preheat oil to 375 degrees over medium-high heat in deep skillet.
  2. In large bowl, combine remaining ingredients and 2 tablespoons of water, mixing well.
  3. Using a teaspoon, drop walnut size amounts of batter gently into the hot oil.
  4. Fry fritters in small batches of 4 or 5 for about 3 minutes each or until deep golden brown. Let rest on paper towels to drain excess oil before serving hot.

Note: These may be made ahead of time and kept hot in oven on baking sheet.
