Baked Cheese Crisps

Perfect for serving with soups or salads.

cheese crisps CFWLSIngredients:
1 cup shredded hard cheese (Parmesan, Asiago, Romano, etc.)

Herbs or seasoning – optional

Preheat oven to 425 F.

Toss cheese with 1 tsp any seasoning or herbs  (garlic powder, pepper, powder, parsley, etc.)

Pile 1 Tablespoon of cheese on a baking sheet covered with a silicone mat or parchment paper.

Spread the cheese out a bit into even piles the desired size of the crisps. Allow space between piles as they spread a bit.

Bake 5 to 6 minutes until they are a light golden brown (they will be a little darker at the edges). Watch carefully.

Bacon & Cheese Squash Boats

Who doesn’t love bacon???



6 small to medium yellow squash

Salt & pepper

Onion powder

¾ cup shredded Cheddar cheese

4 strips bacon, cooked and crumbled

1/3 cup light sour cream

1 green onion, thinly sliced



  1. Preheat oven to 350 degrees and spray baking sheet with cooking spray.
  2. Cut ends off yellow squash, then cut each in half lengthwise. Place halves cut side up on baking sheet.
  3. Sprinkle squash with salt, pepper and onion powder. Top each with an even amount of cheese and crumbled bacon.
  4. Bake for 12-14 minutes or until cheese is bubbly and squash has a little bit of give to the touch. Serve with a dollop of sour cream and a sprinkle of green onion.


Note: You may want to scoop a small trough in the squash to create more of a boat.

Ham & Cheese Fritters

A southern favorite!



4-6 cups vegetable oil (for frying)

1 cup diced cooked ham

½ cup shredded sharp Cheddar cheese

½ cup whole wheat or almond flour

½ cup soy flour

3 large eggs

1 Tbls fresh chives, chopped

1 Tbls baking powder

½ tsp salt



  1. Preheat oil to 375 degrees over medium-high heat in deep skillet.
  2. In large bowl, combine remaining ingredients and 2 tablespoons of water, mixing well.
  3. Using a teaspoon, drop walnut size amounts of batter gently into the hot oil.
  4. Fry fritters in small batches of 4 or 5 for about 3 minutes each or until deep golden brown. Let rest on paper towels to drain excess oil before serving hot.

Note: These may be made ahead of time and kept hot in oven on baking sheet.
