Dilly Grilled Shrimp with Dill Aioli

Simple flavors combine for a winner!

Ingredients:
8 oz large shrimp, peeled & deveined
1 Tbsp olive oil (I used dill infused for extra flavor)
2 cloves garlic, minced
Juice from 1 lemon
1 tsp dried dill

Aioli:
3 Tbsp light mayo
2 oz plain Greek yogurt
1 tsp dried dill
1 tsp dried parsley
½ tsp celery salt
½ tsp garlic powder
½ tsp onion powder
½ tsp sea salt

Directions:
1. Combine oil, garlic, lemon juice and dill in resealable bag or covered bowl. Add shrimp and toss to coat.
2. Combine aioli ingredients and chill until serving.
3. Thread shrimp onto skewers and grill over medium heat until pink, turning once.
4. Serve each portion with ¼ of the aioli sauce.

Makes 2 servings (this recipe easily doubles)

Grilled Pesto Shrimp Kabobs

Pair shrimp kabobs with a fresh garden salad and a slice of melon!

Ingredients
1 lb jumbo shrimp, peeled and deveined
1 cup fresh basil leaves, chopped
1 clove garlic
¼ cup shredded parmesan cheese
3 Tbls olive oil
Salt & pepper

Directions

  1. Toss basil leaves, garlic, parmesan, olive oil and seasonings together in the bowl of a food processor and pulse until blended smooth.
  2. Combine raw shrimp with pesto and allow to marinate for an hour. (I don’t always have an hour and it still tastes great)
  3. Soak 4 wooden skewers in water for 20-30 minutes. Thread shrimp onto skewers and place on metal outdoor grill pan.
  4. Cook over medium-hot grill until shrimp turn pink. Remove from heat immediately to avoid over-cooking. 6-8 minutes should be enough.
  5. Garnish with fresh basil & extra shredded parmesan if desired.

Grilled Shrimp with Lemon Aioli

2 slices cured lemon*

1/2 cup mayonnaise

1 tablespoon minced fresh tarragon

1 teaspoon lemon juice

1 pound extra large shrimp, peeled and deveined

2 teaspoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon kosher salt

 

Directions

  1. Soak cured lemons briefly in a bowl with cold water to remove curing brine, about 10 minutes. Dry lemons with paper towels and finely mince.
  2. Stir minced lemon, mayonnaise, tarragon, and lemon juice together in a bowl. Cover bowl with plastic wrap and chill aioli in the refrigerator until cold, at least 15 minutes.
  3. Preheat an outdoor grill for high heat, and lightly oil the grate.
  4. Put shrimp in a bowl. Drizzle olive oil and sprinkle paprika and salt over the shrimp, stir to coat shrimp completely.
  5. Cook the shrimp on the preheated grill until they are bright pink on the outside and the meat is no longer transparent in the center, about 2 minutes per side. Transfer shrimp to a plate and serve with lemon aioli.

*cured lemons are available at Whole Foods or Williams-Sonoma and other specialty stores or make your own!
