Fettuccine with Spinach and Tomatoes

Another great fresh & tasty vegetarian option!

IngredientsFettuccine with spinach and tomatoes

2 packets of Fettuccine Pasta (available at CFWLS)

2 tsp olive oil

4 cups fresh spinach

1 cup grape or cherry tomatoes

2 Tbls capers

1 clove garlic, minced

¼ cup fresh basil

¼ tsp oregano

1 tsp black pepper

1/4 tsp salt

4 Tbls Parmesan cheese



  1. Cook pasta according to directions, drain.
  2. Add olive oil to wok or skillet and heat to medium high.
  3. Add spinach, tomatoes, capers, garlic and basil. Cook until slightly wilted and add pasta.
  4. Season with oregano, salt & pepper.
  5. Serve with 2 Tablespoons of parmesan cheese.

Low Carb Sausage and Artichoke Pasta

This dish is easily modified to fit your taste – add red pepper flakes or garlic for a more intense flavor!

4 pkgs Proti low carb pasta

12 oz pkg chicken sausage

7.5 oz jar roasted red peppers

8 oz jar marinated artichokes

4 Tbls capers

1 Tlbs olive oil

2 Tbls Parmesan cheese


  1. Cook pasta as directed, drain and put back in pot. Drizzle with olive oil.
  2. Grill or cook sausage, slice and add to pot.
  3. Drain roasted red peppers, slice and add to mix.
  4. Drain artichokes, quarter if necessary and add to mix.
  5. Add capers to mix and put back on medium low heat.
  6. When pasta mixture is hot, serve and sprinkle with Parmesan cheese.

Pasta with Artichokes, Zucchini and Lemon

2 medium zucchini, sliced

6 packets Proti-Pasta, dry (6 cups)

1/3 cup olive oil

2 cloves garlic, minced

2, 9 ounce packages frozen artichoke hearts, defrosted

2 teaspoons lemon zest

1/4 cup lemon juice

1/3 cup Parmigiano Reggiano cheese, freshly grated

1 tablespoon fresh tarragon, chopped



1. Sprinkle zucchini with salt. Drain in colander 30-60 minutes.

2. Bring a large pot of water to a boil. Cook pasta, drain and return to pot.

3. Heat olive oil in a large skillet. Add zucchini and sauté until tender.

4. Add garlic and sauté 1 additional minute.

5. Add artichoke hearts, lemon zest and lemon juice-simmer for 2 minutes.

6. Add tarragon; mix well. Sprinkle with Parmigiano cheese and serve.
