Tomato & Spinach Frittatas

For breakfast, brunch or appetizers!

2 cups baby spinach
1 (15 oz) can diced tomatoes, drained
2 cloves garlic, minced
½ cup shredded cheddar cheese
10 eggs
¼ cup milk
Salt & pepper to taste


  1. Preheat oven to 350 degrees F (175 degrees C). Spray muffin tin with cooking spray.
  2. Divide spinach, tomatoes & cheese in the muffin cups.
  3. Mix eggs, garlic, milk and salt & pepper in large bowl and whisk together.
  4. Pour mixture evenly into each cup.
  5. Bake for 25 minutes.

Makes 12 servings

Crab Stuffed Cherry Tomatoes

Pretty & delicious!



1 pint cherry tomatoes

¾ cup lump crab meat, picked over

2 Tbls light mayo

2 Tbls grated Parmesan cheese

1 green onion, finely diced

1 Tbls red bell pepper, finely diced

1/8 tsp salt

1/8 tsp pepper



  1. Preheat oven to 350 degrees and spray baking sheet with cooking spray.
  2. Cut small slice off bottom of tomatoe so that it stands upright. Remove stem and core from the top of each and remove about 2/3 of the pulp. Place tomatoes cut side up on baking sheet.
  3. In mixing bowl, gently fold together remaining ingredients until well blended.
  4. Stuff each hollowed tomatoe until overflowing, and them place back on baking sheet.
  5. Bake for 7-10 minutes or until heated through. Serve hot.


Note: Larger tomatoes will work too but you will need to increase the cooking time.

Slowcooker Creamy Chicken & Tomato Soup

Slowcooker Creamy Chicken & Tomato Soup


8 frozen skinless boneless chicken breast
2 tablespoons Italian Seasoning
1 tablespoon dried basil
2 cloves garlic, minced
1 large onion, chopped
2 14 oz. can of coconut milk (light), shake before opening can to avoid separation
3 14 oz. cans diced tomatoes and juice
2 cups of chicken broth, fat free
1 small can of tomato paste
Sea Salt and pepper to taste

Put all the above ingredients into the crock-pot, cook for 9 hours on low. After 9 hours take two forks and shred the chicken, set the crock-pot on warm till ready to serve (making sure to taste it before serving to make sure there is enough salt and pepper)
