Chicken and Mushrooms with Lemon and Garlic

Quick & easy with the bright flavor of lemon!

Ingredients:
4 (3 oz) chicken breasts
4 Tbls finely ground almond flour
2 Tbls butter, divided
8 oz mushrooms, sliced to 1/4”
2 cloves garlic, minced
¼ cup chicken broth
Juice of ½ lemon, cut the remainder in wedges
Fresh parsley
Salt & pepper to taste 

Directions

  1. Flatten chicken breasts with mallet to about ¼ inch thickness.
  2. Dredge chicken in almond flour with very light coating and season with salt & pepper.
  3. Heat 1 Tbls butter in skillet and cook chicken on each side until golden brown and cooked through. Remove to warm plate.
  4. Melt remaining butter in skillet and add garlic and mushrooms. Cook for 3-4 minutes or until tender and add chicken broth. Cook to reduce sauce a bit and add lemon juice.
  5. Spoon mushrooms and sauce over chicken and sprinkle with parsley and lemon wedges to serve.
  6. Add your favorite veggie or side salad to round out your meal!

Baked Cheesy Smothered Chicken

Cheese makes almost everything better!

Ingredients
4 (3-4 oz) chicken breasts
8 oz Greek non-fat yogurt
1 tsp dried oregano
1 tsp dried basil
1 clove garlic, minced or 1 tsp garlic powder
Salt & pepper to taste
½ cup grated parmesan cheese
2 slices provolone cheese

Directions
1. Preheat oven to 375 degrees. Coat baking dish with cooking spray.
2. Place chicken breasts in glass baking dish.
3. Top each with ½ slice provolone.
4. Mix together yogurt through parmesan and spread over chicken breasts.
5. Serve with a garden salad & riced cauliflower.

Seared Scallops with Thai Chili Sauce

A quick & easy weeknight dinner!

Ingredients
2 Tbls butter
1 lb sea scallops
Salt & pepper to taste
Dressing:
2 Tbsp Thai red chili sauce
2 cloves garlic, minced
Thai basil, sliced in thin strips
1 lime, wedged

Directions
1. Rinse and drain scallops. Pat dry with a paper towel. Sprinkle with salt & pepper.
2. In heavy skillet, melt butter over high heat. Once it begins to foam, add scallops and allow to brown, about 3-4 minutes. Turn scallops.
3. Add garlic, basil and chili sauce and allow to brown slightly (but do not coat scallops).
4. Remove scallops to a plate when browned on both sides. Spoon sauce over to serve. Garnish with lime wedges and extra basil.

Basil-Lime Chicken Kabobs

Serve with fresh veggies or a bright salad!

Ingredients
3 Limes (juice and zest) Divided
1/4 Cup Olive Oil
3 Tbls Dijon Mustard
3 Tbls Worcestershire Sauce
3 Tbls Soy Sauce
6 Green Onions, sliced
4 Cloves Garlic, minced
2 Tbls Fresh Basil, chopped
Salt and Pepper to taste
4 Chicken Breasts, sliced into cubes

Instructions
1. Combine the zest and juice of 2 limes, Olive Oil, Mustard, Worcestershire, Soy, 3 onions, 2 garlic
cloves salt and pepper and mix well.
2. Cut chicken into even cubes and place in a gallon sized baggie.
3. Pour marinade over the chicken and marinate for 1 hour. Thread onto 8 presoaked skewers.
4. Preheat grill.
5. Place chicken on grill and grill for 7 minutes.
6. Then flip and cook until internal temp reaches 170.
7. Remove from grill and let meat rest.
8. Meanwhile combine juice and zest of one lime with extra virgin olive oil, 3 chopped onions, 2
minced garlic cloves, basil.
9. Plate chicken kabobs & cover with sauce if desired.

Crustless Spinach Quiche

A brunch favorite filled with flavor! 

Ingredients
6 eggs
10 oz pkg frozen spinach, thawed & drained
1 medium onion, diced
2 cloves garlic, minced
1 Tbls butter
½ green olives, sliced
1 tsp red pepper flakes
2 cups shredded cheddar (I use the Mexican blend)
Salt & Pepper to taste

Directions

  1. Preheat oven to 350 degrees. Spray large (9”) quiche dish with cooking spray.
  2. Saute onions & garlic in butter until softened. Stir in spinach and cook until heated through. Remove from heat.
  3. Add olives and pepper flakes.
  4. Whisk eggs and stir into spinach mixture.
  5. Stir in cheese and pour into baking dish. Sprinkle a little more cheese on top if desired.
  6. Bake for 35-40 minutes or until eggs are set and edges turn slightly brown.
  7. Remove and allow to cool before serving.

Low Carb Taco Bowl

Ingredients
1 lb ground beef or turkey – your choice!
1 packet of taco seasoning
1 can Rotel tomatoes ( I like the cilantro one)
1 pkg cole slaw mix
1 4 oz. can sliced black olives
1 4 oz. can diced jalapenos – optional
1 avocado
3 green onions – sliced
Shredded cheese & sour cream for topping 

Directions

  1. Brown ground meat and stir in seasoning packet.
  2. Add tomatoes, olives & jalapenos.
  3. Stir in cole slaw mix and onions (save a bit for garnish).
  4. Serve with diced avocado, shredded cheese & sour cream. Sprinkle with remaining green onion.

Makes 6 servings
