Creamy Shrimp with Mushrooms and Spinach

It doesn’t get much better than this!

1 lb raw shrimp, peeled & deveined
8 oz baby bell mushrooms
3 oz baby spinach
2 Tbls butter
3 cloves garlic, minced
1 tsp dried basil
½ cup chicken broth
½ cup half & half
2 tsp arrowroot powder (or cornstarch)
Salt & pepper to taste
1/2 cup parmesan cheese

1. Toss shrimp with salt & pepper, sprinkle with basil.
2. Melt 1 Tbls butter in skillet and cook shrimp over medium heat until pink, turning to cook evenly on both sides. Remove from skillet.
3. Melt remaining butter in skillet and add garlic. Saute and add chicken broth and spinach.
4. Combine half & half with arrowroot powder and pour over wilted spinach. Stir mixture until it starts to thicken.
5. Stir in parmesan cheese and cook until cheese is melted.
6. Toss in shrimp and stir to coat.
7. Sprinkle with basil and serve.

Lime and Cilantro Shrimp Skillet

Tangy & tasty with a hint of smoke!

1 Tbls olive oil
1 Tbls butter
2 limes, sliced thin
4 cloves garlic, minced or crushed
1 tsp smoked paprika
½ tsp red pepper flakes (if desired)
½ cup white wine
2 lb large shrimp (peeled & deveined with tails)
1 Tbls Fresh ground pepper
½ Tbls Sea salt
½ cup fresh cilantro, chopped

Package of riced cauliflower – cooked


  1. Heat oil over medium to high heat and allow to coat the bottom of the cast iron skillet.
  2. Add butter and heat until it bubbles.
  3. Add lime slices and garlic. Cook for 30-45 seconds.
  4. Add paprika, salt, peppers & wine and allow to simmer for 2-3 minutes to reduce by half.
  5. Add the shrimp and stir often allowing it to cook until pink. Remove from skillet and plate.
  6. Serve with riced cauliflower and sprinkle with more cilantro if desired.

Creamy Tuscan Shrimp

2 Tbls butter

6 cloves garlic, minced

1 lb large shrimp, tails on

1 small onion, diced

2 cups sliced mushrooms

½ cup dry white wine

½ cup sun dried tomatoes, drained

1 ½ cup half and half

Salt & pepper to taste

3-4 cups baby spinach

2/3 cup shredded parmesan cheese

2 tsp Italian seasoning

1 Tbls fresh parsley, chopped



  1. Meat butter in large skillet over medium-high heat.
  2. Add garlic and stir about 1 minute.
  3. Add shrimp and cook 2 minutes on each side or until pink. Transfer to a bowl.
  4. Add onion and mushrooms to skillet and cook 1 minute, add wine and allow to reduce slightly.
  5. Add sun dried tomatoes and cook 2-3 minutes.
  6. Add half and half and allow to come to simmer.
  7. Season with salt, pepper & Italian seasoning.
  8. Add spinach and cook until it begins to wilt.
  9. Add parmesan cheese and stir until it melts.
  10. Add shrimp back to skillet and stir.
  11. Garnish with parsley & serve!

Chipotle Shrimp

3 cloves garlic, minced

2 chipotle peppers in adobo sauce, chopped

1 lemon, juiced

1 tablespoon olive oil

1 tablespoon paprika

1 teaspoon chopped fresh cilantro (optional)

1 teaspoon kosher salt

1/2 teaspoon cracked black pepper

1/2 teaspoon crushed red pepper flakes

1/4 teaspoon cayenne pepper

2 pounds uncooked medium shrimp, peeled and deveined

wooden or metal skewers



1.      Mix together the garlic, chipotle peppers, lemon juice, olive oil, paprika, cilantro, kosher salt, black pepper, red pepper flakes, and cayenne pepper in a bowl. Stir in the shrimp, and mix well to thoroughly coat. Marinate for 30 minutes in refrigerator.

2.      Preheat an outdoor grill for medium-high heat, and lightly oil the grate.

3.      Remove the shrimp from the marinade, and discard excess marinade. Thread about 5 shrimp per skewer, and grill on the preheated grill until the shrimp turn pink and opaque in the center, about 2 minutes per side.

Spicy Grilled Shrimp

Spicy Grilled Shrimp


1 clove garlic, minced

1 tsp coarse salt

½ tsp cayenne pepper

1 tsp paprika

2 Tbls olive oil

2 tsp lemon juice

2 pounds large shrimp, peeled & deveined

8 lemon wedges for garnish


  1. Preheat grill for medium heat.
  2. In a small bowl, crush the garlic with the salt. Mix in cayenne pepper and paprika, and then stir in olive oil and lemon juice to form a paste. In a large bowl, toss shrimp with garlic paste until evenly coated.
  3. Lightly oil grill grate. Cook shrimp for 2 to 3 minutes per side, or until opaque. Transfer to a serving dish, garnish with lemon wedges, and serve.
