Creamy Shrimp with Mushrooms and Spinach

It doesn’t get much better than this!

Ingredients
1 lb raw shrimp, peeled & deveined
8 oz baby bell mushrooms
3 oz baby spinach
2 Tbls butter
3 cloves garlic, minced
1 tsp dried basil
½ cup chicken broth
½ cup half & half
2 tsp arrowroot powder (or cornstarch)
Salt & pepper to taste
1/2 cup parmesan cheese

Directions
1. Toss shrimp with salt & pepper, sprinkle with basil.
2. Melt 1 Tbls butter in skillet and cook shrimp over medium heat until pink, turning to cook evenly on both sides. Remove from skillet.
3. Melt remaining butter in skillet and add garlic. Saute and add chicken broth and spinach.
4. Combine half & half with arrowroot powder and pour over wilted spinach. Stir mixture until it starts to thicken.
5. Stir in parmesan cheese and cook until cheese is melted.
6. Toss in shrimp and stir to coat.
7. Sprinkle with basil and serve.

Turkey Sliders with Spinach and Feta

Serve as a main entrée or an appetizer – they’re a crowd-pleaser!

Ingredients
2 lbs ground turkey or ground turkey sausage
2 eggs
2 cloves garlic, minced
10 oz package of fresh baby spinach, chopped
4 oz feta cheese
Salt & pepper to taste

Tzatziki sauce
6 oz plain Greek yogurt
½ c cucumber, grated
1 tsp olive oil
2 tsp white wine or rice vinegar
1 clove garlic, minced
1 tso dill
Salt to taste

Directions

  1. Mix all ingredients for sliders together in a large bowl.
  2. Form 24 small patties on parchment paper or foil.
  3. Fry patties over medium to medium-high heat in non-stick skillet that has been sprayed with cooking spray. (These take a little heat to brown)
  4. Transfer to cooling rack.
  5. Serve with Tzatziki sauce.

Parmesan & Garlic Protein Orzo

A perfect meatless entrée for your busy nights! 

Ingredients
1 tsp olive oil
2 packets of protein orzo
2 cloves garlic, minced
1 lg shallot or 3 green onions, sliced
2 cups chicken broth
½ cup milk
¼ tsp salt
¼ tsp fresh ground pepper
¾ cup Parmesan cheese, grated
2 cups fresh baby spinach

Directions

  1. Heat oil in skillet and add orzo (uncooked). Stir until slightly browned.
  2. Add garlic and shallots and cook until softened.
  3. Add ½ cup chicken broth until absorbed, then add another ½ cup of broth. Continue until all the broth is absorbed.
  4. Add ½ cup milk and cook until almost absorbed.
  5. Toss in the spinach, salt & pepper. Stir until wilted.
  6. Add ½ cup Parmesan and allow to start to melt.
  7. Divide into bowls and top with remaining cheese.

Herbed Cheese & Spinach Chicken

This main course is a special treat for guests and family alike! spinach and herbed cheese chicken chicken

Ingredients

4 chicken breast halves

3-4 oz herbed goat cheese or cream cheese

10 oz package of frozen chopped spinach

Salt & pepper to taste

2 tsp paprika

½ cup shredded parmesan cheese

 

Directions

Thaw spinach. Press out excess water and put in mixing bowl.

Cut slits across the top of each chicken breast about 1/2” apart and 2/3 of the way through.

Place chicken breasts into glass baking dish that has been sprayed with cooking spray.

Mix herbed cheese, spinach, salt & pepper and paprika together in bowl until well blended.

Stuff each slit with a spoonful of spinach mixture.

Sprinkle with parmesan cheese.

Bake in 350 degree oven for 25-30 minutes or until browned and bubbly.

Heavenly Meatloaf with Blue Cheese, Mushrooms and Spinach

Ingredients:
2 eggs
1 cup finely chopped fresh spinach
1/2 cup sliced fresh mushrooms
1/2 cup plain bread crumbs
1/2 small yellow onion, finely chopped
1/3 cup 2% milk
1/3 cup crumbled blue cheese
2 tablespoons reduced-sodium Worcestershire sauce
1 tablespoon minced garlic
1/4 teaspoon cayenne pepper
1 pinch dried oregano
1 pinch dried basil
salt and ground black pepper to taste
1 1/2 pounds extra-lean ground beef

Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
Mix eggs, spinach, mushrooms, bread crumbs, onion, milk, blue cheese, Worcestershire sauce, garlic, cayenne pepper, oregano, basil, salt, and black pepper together in a large bowl. Add ground beef and mix thoroughly with your hands; pack into prepared loaf pan.
Bake in the preheated oven until no longer pink in the center, 45 to 60 minutes. An instant-read
thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
