Chicken and Mushrooms with Lemon and Garlic

Quick & easy with the bright flavor of lemon!

Ingredients:
4 (3 oz) chicken breasts
4 Tbls finely ground almond flour
2 Tbls butter, divided
8 oz mushrooms, sliced to 1/4”
2 cloves garlic, minced
¼ cup chicken broth
Juice of ½ lemon, cut the remainder in wedges
Fresh parsley
Salt & pepper to taste 

Directions

  1. Flatten chicken breasts with mallet to about ¼ inch thickness.
  2. Dredge chicken in almond flour with very light coating and season with salt & pepper.
  3. Heat 1 Tbls butter in skillet and cook chicken on each side until golden brown and cooked through. Remove to warm plate.
  4. Melt remaining butter in skillet and add garlic and mushrooms. Cook for 3-4 minutes or until tender and add chicken broth. Cook to reduce sauce a bit and add lemon juice.
  5. Spoon mushrooms and sauce over chicken and sprinkle with parsley and lemon wedges to serve.
  6. Add your favorite veggie or side salad to round out your meal!

Chicken and Mushroom Skillet

Simple flavors that pack a punch!

Ingredients
4 chicken breast halves
Salt & pepper to taste
2 Tbls butter
8 oz fresh mushrooms, sliced thick
1/3 cup dry white wine (or water) 

Directions

  1. Preheat oven to 400 degrees F.
  2. Sprinkle each chicken breast with salt & pepper.
  3. Heat 1 Tbls butter in cast iron (or heavy skillet) over medium-high heat. Cook until browned and turn over.
  4. Add mushrooms and increase heat. Stir until mushrooms start to soften.
  5. Place skillet in preheated oven and bake for 18-20 minutes.
  6. Remove chicken from skillet and set aside. Place skillet back on burner over medium-high heat. Juices will start to crust.
  7. Add wine (or water) to skillet and stir. Allow to reduce and stir in remaining butter.
  8. Stir to coat mushrooms.
  9. Plate chicken and top with mushrooms. Serve with green veggie or salad.

Creamy Shrimp with Mushrooms and Spinach

It doesn’t get much better than this!

Ingredients
1 lb raw shrimp, peeled & deveined
8 oz baby bell mushrooms
3 oz baby spinach
2 Tbls butter
3 cloves garlic, minced
1 tsp dried basil
½ cup chicken broth
½ cup half & half
2 tsp arrowroot powder (or cornstarch)
Salt & pepper to taste
1/2 cup parmesan cheese

Directions
1. Toss shrimp with salt & pepper, sprinkle with basil.
2. Melt 1 Tbls butter in skillet and cook shrimp over medium heat until pink, turning to cook evenly on both sides. Remove from skillet.
3. Melt remaining butter in skillet and add garlic. Saute and add chicken broth and spinach.
4. Combine half & half with arrowroot powder and pour over wilted spinach. Stir mixture until it starts to thicken.
5. Stir in parmesan cheese and cook until cheese is melted.
6. Toss in shrimp and stir to coat.
7. Sprinkle with basil and serve.

Baked Parmesan Mushrooms

Ingredients

2 pounds baby bella mushrooms, cleaned and sliced

3 Tlbs olive oil

Juice from ½ lemon

Zest from 1 lemon

3 cloves garlic, minced

2 tsp tarragon

½ tsp thyme

½ cup grated Parmesan cheese

Salt & pepper to taste

 

Directions

  1. Preheat oven to 375 degrees and spray baking sheet with cooking spray.
  2. Scatter mushrooms in single layer on baking sheet.
  3. Combine remaining ingredients and drizzle over mushrooms.
  4. Bake for 15 minutes, stirring once.
  5. Serve with your favorite protein!

Don’t be shy – you’re going to love it!

Raspberry Mushroom ChickenIngredients

4 boneless, skinless chicken breasts

Salt & pepper

1 Tbls olive oil

4 cloves garlic, crushed

1 large shallot, chopped

1 c chicken broth

½ cup dry red wine

8 oz baby bella mushrooms

1 cup fresh raspberries

1 Tbls butter

1 Tbls balsamic vinegar

1 tsp grated lemon zest

 

 

Directions

  1. Season chicken with salt & pepper.
  2. Heat skillet over medium heat and add olive oil.
  3. Sear chicken on each side for about 3 minutes. Remove chicken from pan and set aside.
  4. Add garlic and shallot to skillet and cook over medium heat for 1 minute.
  5. Add chicken broth and wine, cook until slightly reduced or about 10 minutes.
  6. Add sliced mushrooms and lower heat to a simmer.
  7. Return chicken to skillet, cover and simmer until chicken is cooked through or about 10 minutes.
  8. Add butter, balsamic vinegar and lemon zest. Stir to blend.
  9. Toss raspberries into and allow to warm about 1 minute.

Sausage Stuffed Mushrooms

Sausage Stuffed Mushrooms

So good, you may want to make a double batch!

 

Ingredients

16 medium white button mushrooms (1 pound)

¼ pound ground hot turkey sausage

2 ounces light cream cheese

1 green onion, thinly sliced

1/8 tsp salt

1/8 tsp pepper

Parsley for garnish

 

Directions

  1. Preheat the oven to 375 degrees and spray a sheet pan with cooking spray.
  2. Wipe mushrooms clean with damp cloth. Carefully twist out the stem and place caps on baking sheet. Chop stems and set aside.
  3. Saute turkey sausage, and chopped mushroom stems to skillet over medium high heat and brown well. Remove from heat and drain.
  4. While still hot, combine sausage & mushroom mixture with cream cheese, green onion, salt & pepper. Stir to mix and stuff each mushroom cap with a heaping spoonful of the stuffing.
  5. Bake stuffed mushrooms for 15 minutes or until mushrooms are tender. Sprinkle with parsley. Serve hot.

Heavenly Meatloaf with Blue Cheese, Mushrooms and Spinach

Ingredients:
2 eggs
1 cup finely chopped fresh spinach
1/2 cup sliced fresh mushrooms
1/2 cup plain bread crumbs
1/2 small yellow onion, finely chopped
1/3 cup 2% milk
1/3 cup crumbled blue cheese
2 tablespoons reduced-sodium Worcestershire sauce
1 tablespoon minced garlic
1/4 teaspoon cayenne pepper
1 pinch dried oregano
1 pinch dried basil
salt and ground black pepper to taste
1 1/2 pounds extra-lean ground beef

Directions:
Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
Mix eggs, spinach, mushrooms, bread crumbs, onion, milk, blue cheese, Worcestershire sauce, garlic, cayenne pepper, oregano, basil, salt, and black pepper together in a large bowl. Add ground beef and mix thoroughly with your hands; pack into prepared loaf pan.
Bake in the preheated oven until no longer pink in the center, 45 to 60 minutes. An instant-read
thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
